So I made my first successful trip to Fat Boys BBQ in Temple, Tx. last week, and I was not disappointed in the least. I say “first successful” because I have been there before but went on a day they were closed. I have, however, tasted their BBQ at a competition.
Now, let me just say that Danny and Codey Mikes (as is Corey) are some of the most all-around knowledgeable families in the BBQ business that I have ever met. Truly, I’m not just saying that, and Danny is a walking encyclopedia of BBQ secrets, people, and skills.
Now, on to the BBQ. I walked in, and the BBQ was looking great, to include the sides. Now, when I say “Working Man’s BBQ,” I don’t mean that in any way to be a slight. I could eat this BBQ every day and never be disappointed. But when I call it that, I mean that this is not Craft BBQ, and so it’s what many of us call good ole Traditional Texas BBQ. So you know, it is also more affordable.
The brisket was moist and flavorful and had almost no differences between it and prime brisket. The pork ribs were a one-bite success and also packed a great flavor. Together, they were easily competition winners and certainly winners for your family. The sausage is from Slovacek’s in West, so there is absolutely nothing wrong with that. Also, Codey threw a pork belly burnt end on the plate just to show off. And show off he did because it was also a winner. Finally on the Meat or Fowl side of the house, the Turkey. Moist, extremely flavorful and had just enough smoke to it. Not over powering smoke at all. I mean just perfect that was smooth all the way through.
Now, I chose the green beans over what I thought to be collard greens only because I can no longer eat as much as I used to. Now, they come out of a can, and that’s okay, but they flavored them to where I can honestly say they were the very best green beans I have ever had. And I do mean, WOW! Best ever.
All in all, I highly recommend Fat Boys BBQ in Temple, Tx., and I am 100% ready to go back myself.
